Production of Rock Candy
The Saharkhiz rock candy is a healthy product that holds the National Standard License and Logo of Iran as well as the health license for production issued by the Ministry of Health, Treatment and Medical Education. This product is produced under full and ongoing supervision of the highly equipped and modern quality control laboratory of the Saharkhiz Group. It is an optimal alternative for sugar to sweeten different warm beverages. This product is comprised of filtered water, refined white sugar and pure saffron, allapproved by the quality control laboratory of the Saharkhiz Saffron Company.
The most important stage of rock candy production using modern and industrial methods which makes a great quality difference from similarly produced rock candy, using traditional methods is the process of producing sugar syrup before crystallization which is converted to rock candy. A description of the modern and industrial method of producing rock candy in this factory is therefore presented as follows:
To produce rock candy using modern methods, the sugar syrup is cooked using indirect heath (such as heat from steam). Rock candy sustains the least damage using this method. The water used to produce molasses and eventually rock candy is purified by RO equipment. It is then combined with sugar, cooked and filtered using a two-phase method by a mechanical filter – in order to filter the particles to bigger particles with the sizes in cm and mm. It is filtered once by filter press equipment using disposable filter papers and is filtered to particles as small as a micron. Its impurities are sifted and then the molasses are transferred via a stainless steel piped system through automatic carts to special hot chambers used for crystallization.
During all the phases of the process, experts of the quality control laboratory monitor the process by taking samples five times in each productionphase in order to check the quality of the molasses and eventually the final product.
The clear crystals of the rock candy now a finished product show how clean the molasses used were and how significantly different it is from similar products in the market.
